Ingredients
- 1.24 lbs Chicken thighs (4 thighs) boneless skinless
- 1/2 package Mesquite Marinade
- 2 tbsp Water
- 2 tbsp Oil
- 1 tsp Liquid smoke
- Pepper to taste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried parsley
White Sauce
- 2 tbsp White Vinegar
- 1/2 tbsp BBQ Sauce
- 1/4 tsp Garlic powder
- 1/4 tsp Liquid Smoke
- 1/4 tsp Onion powder
- 1 1/2 tbsp Spicy Brown Mustard (Regular mustard works too)
- 1/2 tbsp + 1/4 tsp Brown sugar
- 1 tsp Worcestershire sauce
- 1/2 tsp Salt
- 1/4 tsp Garlic Paste (Or garlic very finely minced)
- 1/4 tsp Chicken Bouillon Season
- Veggies-kabob Style
- 1 bell pepper (chopped)
- 1 Onion (chopped)
Citrus Rice
- 1 cup Jasmine rice
- 2 cups water
- 1 tbsp Butter
- 1 tbsp Olive oil
- Juice From Half a Lemon
- Juice From Half a Lime
- Cilantro
- 1 tbsp Chicken Bouillon Seasoning
Instructions
- Prep chicken for marinade and set aside. In a bowl add half the package of mesquite marinade, liquid smoke, pepper, onion powder, garlic powder, and dried parsley. Mix well.
- Add marinade to meat and mix until well combined. Place in the refrigerator to marinate. minimum of 2 hours.
- Chop onion, bell pepper, and tomatoes.
- Add mesquite marinade to onions and bell peppers only and refrigerate until its time to grill.
- In a separate bowl make white sauce by adding vinegar, bbq sauce, garlic + onion powder, liquid smoke, brown mustard, brown sugar, Worcestershire sauce, salt, garlic paste, and bouillon seasoning. Mix until well combined and chill until it’s time to serve dinner.
- When ready to grill add peppers and onions to skewers or cook in a skillet until desired texture is met.
- Grill chicken or cook indoors. Once fully cooked allow to rest before chopping into pieces.
- Cook rice according to package instructions. Add chicken bouillon or salt to the water.
- Once rice is fully cooked add cilantro, lime juice, lemon juice, Olive oil, and butter.
- Taste for season and adjust accordingly.
- To assemble add rice, top with chicken, peppers, tomatoes, and drizzle with white sauce.
