I made these Key Lime Cake Truffles using the HELIX™ beaters and dough hooks. There is also a wire whisk attachment that is perfect for meringues. This lightweight hand mixer is sturdy and made for heavy-duty ingredients–very similar to the generic stand mixer, except there’s no fuss. It also has five speeds and a turbo boost. Key Lime Cake Truffles w/ BLACK+DECKER® Performance HELIX™ Premium Hand Mixer
Ingredients
- 1 3/4 cup White Cake Mix (Half of a boxed cake mix)
- 1/4 cup Vegetable Oil
- 1 Large Egg
- 2/3 cup of Water
Truffle Mix
- 1/4-1/2 cup White Frosting (depends on desired truffle texture)
- 1-2 tbsp Key Lime Juice (depends on desired truffle texture)
- 1 tsp + Garnish Key Lime or Lime Zest
- White Chocolate Glaze
- 1 cup White Chocolate Chips
- 1 tsp Vegetable Oil
Additional Ingredients
- 1-2 Whole Graham Crackers (Crushed)
- Cooking Spray or Oil (grease cake pan)
Instructions
- 1. Preheat the oven according to the package directions. Add white cake mix, a large egg, vegetable oil, and water to a large mixing bowl. Mix well using the HELIX™ Premium Hand Mixer and beater attachments.
- 2. Place in the oven and bake until an inserted toothpick comes out clean. About 15-17 minutes.
- 3. Allow cake to cool for at least 5 minutes before crumbling cake into a mixing bowl with key lime juice and frosting. Use the HELIX™ Premium Hand Mixer and dough hook attachments to mix well.
- 4. Add lime zest and mix again.
- 5. Use an ice cream scooper or large spoon to scoop 12 balls onto parchment paper. Place in the freezer for 10-15 minutes until truffles cool and set.
- 6. Add white chocolate chips and vegetable oil to a microwave-safe bowl. Heat for 15 seconds intervals and stir. Repeat until white chocolate is melted and silky. Set aside and allow to cool for 3-5 minutes.
- 7. Crush graham crackers in a small bag and set them aside.
- 8. Take the cake truffles out of the freezer and dip each truffle into the melted white chocolate until fully coated. Place back on parchment paper. (A fork works best for this step)
- 9. Immediately add crushed graham crackers and fresh lime zest to each cake truffle while the chocolate is still wet. Allow chocolate to harden on truffles before serving.
- 10. Plate, Serve, and Enjoy!
