Good morning guys! I have a completely original and super delicious recipe for you guys. I am pretty excited for you to make this one because it is hot in more ways than one lol. First up we’ll be making a super easy eggs benedict with a twist 😉 We’ll be loading that baby with marinated carne asada and a spicy hollandaise sauce. Many of you probably read hollandaise sauce and got intimated BUT don’t be! It’s a blender hollandaise sauce and I promise you that if I can do…so can you! Trust Me!
First, let’s talk about our All-Star ingredients line up. We’ll be using Texas Pete® products. Specifically !Sabor! by Texas Pete® Mexican-Style Hot Sauce and Texas Pete® Green Pepper Sauce. We are making something completely off the grid that will make your family say WOWWWW! We’ll be using these products in my Green Pepper & Cheddar Cornbread Waffle Benedict and Spicy Blender Hollandaise. Now, this recipe may sound difficult but I promise its not! It is five star worthy though so get ready for people to ask for seconds and maybe thirds lol.
Lets start by making our marinade for the steak. We’ll be using a combination of the !Sabor! by Texas Pete® Mexican-Style Hot Sauce and the Texas Pete® Original Hot Sauce. We’ll get those blended with some of the brine from our Texas Pete® Green Pepper Sauce and a few other spices found below. We want this to marinate for at-least 4-6 hours up to overnight for the best flavor. My suggestion is to prep it the night before so it will be super flavorful.
Next, we’ll get started on our waffle mix. It’s best to prep the veggies first by getting everything chopped up. Let’s add those to a bowl with our corn meal, flour, and other ingredients. Mix well and set aside until your waffle maker is pre heated. I suggest placing your finished waffles in the oven on the warm setting. Make sure to cook your eggs and set aside. I prefer poached eggs with my benedicts so I’ll be doing that. You can also use over easy or scrambled. It’s totally up to you! Cook your steak to your liking. Mine is cooked to medium but this is totally up to you.
Once all your ingredients are cooked just plate your meal by adding waffles to a plate, top with a couple of avocado slices, add chopped steak, poached eggs, hollandaise sauce, cilantro, onion, and a few dashes of Texas Pete® Original Hot Sauce.

Green Pepper & Cheddar Cornbread Waffle Benedict w/ Texas Pete®
Ingredients
Marinade
- 1 tbsp Texas Pete® Green Pepper Sauce
- 1/2 cup of !Sabor! by Texas Pete® Mexican-Style Hot Sauce
- 1/2 tablespoon of onion powder
- 1/2 tbsp garlic
- 1 tsp steak seasoning
- 3 tbsp water
- 1 tbsp oil
Waffle
- 1/2 cup corn meal
- 1/2 cup flour
- 1 cup milk
- 2 tbsp butter
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup chopped scallions
- 2 tbsp chopped peppers from the Texas Pete® Pepper Sauce
- 1/3 cup chopped green bell pepper
- 1/2 cup shredded cheddar
Poached Eggs
- 12 Eggs
- Enough water to cover the eggs
- 1 tsp Vinegar
- 1/2 tsp Salt
Blender Hollandaise Sauce
- 3 large egg yolks
- 1 tbsp lemon juice
- Pinch of Paprika
- 1/2 cup melted butter
- 1-2 tbsp water
- Few Dashes of !Sabor! by Texas Pete® Mexican-Style Hot Sauce
Additional Ingredients
- 1 lb skirt steak or steak of choice
- 1/4 cup fresh chopped cilantro
- 1/4 cup finely diced white onion
- 1 ripe avocado
- 1 bottle !Sabor! by Texas Pete® Mexican-Style Hot Sauce
- 1 bottle Texas Pete® Green Peppers
Instructions
Marinade
- In a large bowl add !Sabor! by Texas Pete® Mexican-Style Hot Sauce, Texas Pete® Green Pepper Sauce, and remaining marinade ingredients.
- Mix well and add your steak to the mix. Make sure to get marinade all over the steak. Cover and refrigerate for a minimum of 4-6 hours up to overnight.
Waffle
- In a seperate large bowl combine corn meal, flour, baking soda, baking powder, and salt. Mix well.
- In a separate bowl add milk, melted butter, and one egg. Mix well and combine with dry ingredients.
- Chop your Texas Pete® Green Peppers, scallions, and green peppers. Add to the mix along with shredded cheddar cheese.
Poached Eggs
- Add enough water in a high side skillet to cover your eggs.
- Also add vinegar and salt to the water. Give it quick stir. Bring water to a rapid boil.
- Add your eggs one at a time by using a small bowl. Crack one egg into the bowl and place the edge of the bowl into the water and quickly pour the egg. *I cooked up to 4 eggs at a time-you may also be able to fit 5.
- Just make sure the first egg is set before adding the next one.
- The egg will begin to set in the water. I like a runny yolk so I cook it until the whites of the egg are completely set. If you want your yolk more on the done side just continue to cook your egg until your are satisfied with the doneness.
- Remove eggs and place on a paper towel to drain.
- Crack another egg and repeat until all 12 eggs are cooked.
Hollandaise
- Melt butter in a small skillet.
- In a blender add three egg yolks, a pinch of salt, and lemon juice. Blend until well combined.
- Slowly add hot melted butter in a slow stream while blender is blending. * if hollandaise is too thick add a bit of water to thin it out*
Cooking Instructions
- You can cook steak in a skillet or on a griddle. Cook until desired temperature is met. Medium temperature is 145 degrees farenheit.
- Preheat waffle iron and spray with non-stick butter. Add your batter and cook following your waffle irons instructions. Repeat until all waffles are made.
- To plate lay down two waffle traingles and add a couple of slices of ripe avocado.
- Next top with chopped/sliced steak, a poached egg, hollandaise, cilantro, onion, and a few dashes of Texas Pete® Original Hot Sauce.
