Football season is finally among us and for some reason football to me translates to yummy snacks, bar food, and beer! In honor of football season I want to showcase a few recipes that I feel are perfect for not only everyday use but especially game day.
This week I will feature my Beef Queso Dip. I literally created this recipe while I was cooking. Truth be told it is very easy and delicious! You can also add or take away any of the ingredients you like. I love recipes that allow a person to add their own personal touch.

Beef Queso Dip
1 lb Ground beef
1 Cup Milk divided into 2 parts (I used 2% milk)
8 Oz Velveeta (You can sub with Cream cheese if you don’t like the veeta)
8 Oz Colby & Monterey Jack cheese
8 Oz Sharp Cheddar
4 Tbsp Unsalted Butter
10 Oz can Ro-Tel Diced tomatoes & green chilies
1 Jalapeno (diced)
1. Heat butter and 1/2 cup of milk in a saucepan on medium to medium-high heat until butter is melted and mixture is fully heated.
2. Add cream cheese and stir until completely melted.
3. Cut cheddar and colby cheese into cubes and slowly add into the mixture until completely melted.
4. Add second 1/2 cup of milk and stir until combined. (At this stage the mixture will be very thick please do not be alarmed; it will thin out once the additional ingredients are added).
5. In a large frying pan add ground beef and cook until done; drain beef and place back into the pan with the can of tomatoes and diced jalapeno. Cook on medium high heat until mixture heats up.
6. Add cheese mixture to beef and stir until well combined. At this point the queso should have a creamier consistency (this should only take 5-10 minutes to achieve).
7. Serve with tortilla chips and ENJOY!
* If your queso is still thick you can add additional milk to thin it out. Also please be careful not to OVER COOK your cheese.*
