Ingredients
Tacos
- 1 -1.5 lb ground meat
- 1 Package Low sodium taco seasoning
- 2 tsp Chicken Bouillon Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Minced
- 1/2 cup Shredded Cheddar
- 14 oz can Diced Tomato (Rotel)
Additional Ingredients
- 2 cups Shredded Cheese
- 12 Taco Tortillas
Guacamole
- 1/4 cup Cilantro
- 4 Avocados
- Juice of 1 lime
- 1/2 cup diced tomatoes (Flesh only)
- 1 finely diced Jalapeno (remove seeds in you’re not a spice lover)
- 1-2 Garlic cloves (minced)
- 1/2 cup Red onion (diced)
- Salt & Pepper to taste
Pico de Gallo
- 2 cups Fresh Tomato (Diced)
- 1/4 cup Red Onion (Diced)
- Juice from 1/2 a lime
- 1 tsp of Cooking Oil (any kind will do)
- Salt + Pepper to Taste
- Handful Cilantro (Chopped)
Instructions
Tacos
- In a large skillet add ground beef and seasoning. Mix and cook until ground beef is fully cooked. Then add water and mix.
- Add diced tomatoes and shredded cheese. Mix until cheese is melted. Remove from heat and set aside.
- Next add oil to the skillet and place 2-3 tortillas in the skillet. Once tortillas begin to heat up add cheese and the beef mixture to each one.
- Close each tortilla while in the skillet allowing cheesed to melt and bond the tortillas closed.
- Once browned on both sides remove from skillet.
Guacamole
- Dice onion, tomato, cilantro, and jalapeno and set aside.
- Mince garlic clove and set aside.
- Add avocado, diced veggies, lime juice, salt, pepper, and garlic to a medium size bowl.
- Use a potato masher or large fork to mash all of the ingredients until fully combined. (make sure not to leave small chunks of avocado for texture)
- Serve dip with tortilla chips.
- Plate & Enjoy!
Pico de Gallo
- Add Chopped onion, tomato, cilantro, salt, pepper, and oil to a bowl.
- Squeeze the juice of lime into the bowl.
- Stir until well combined and chill until ready to serve.
