I can’t believe we are already in the new year! 2016 flew by super fast….it seems the older I get the faster time seems to go lol. My youth is escaping me day after day 🙂 If there’s anything I could wish for it would be strength and determination to execute this years resolutions. Every year I make resolutions and I’m usually 75% successful in executing them. Last year I wished for prosperity with the blog and my professional career in television production; I had a great year! Things went a lot better than expected so I can’t complain. I hope I can build off last years success this year and do even better.
Now onto personal goals….Like many of you guys one of my new years resolutions is to eat healthier and exercise. I’m not big on setting goal weights; I think I just want to shed some pounds and be healthy. I also want to feel better. There are a lot of times where I get super groggy or even after a full nights rest I still feel super tired. I’m hoping that with a better eating regimen and workout schedule those things will change for me. One of the ways I’m accomplishing these goals is by creating healthier meals….still in line with the goodness that is Margaritas On The Rocks but just low fat, low cal, and low carb. I still need to enjoy my food in order to want to eat it lol. There were many times where I would go SUPER strict and because of that I didn’t stick to the diet for long. This year I’m trying something different some whole 30, some paleo, and low carb. I think it’s important to try different things in order to know what you like.
One thing I can’t seem to live without is pasta and cheese….two of the best combinations if you ask me. I wanted to come up with a low fat alfredo recipe because I love to eat pasta. I think it will be ok as long as I eat it in moderation. The recipe I developed serves 2 and is perfect for a date night in with bae. What makes this recipe low fat is I use flour and skim milk to create the sauce instead of heavy cream, half & half, or full fat milk. I also only use the 1 tbsp of butter instead of 3 or 4. There’s a little fat but not much….which is why this recipe is low fat and not fat free lol. Check out my Skinny Shrimp Scampi
First start with adding the butter and garlic to a pan and stiring until the garlic becomes fragrant.
Next add the flour and stir until the butter and flour are fully combined.
Add the milk and whisk as if your life depends on it. The mixture will eventually become smooth and start to thicken.
Add the seasonings and stir until well combined.
Add the parmesan cheese and stir until melted. Next turn off the heat and toss with al dente pasta until fully coated. Top with more parmesan and parsley if you desire.
Ingredients
- 3/4 cup Skim Milk
- 1 Garlic Clive (minced)
- 4 oz Cream Cheese
- 1/2 cup Parmesan Cheese
- 1 tbsp Butter
- 3 tbsp Flour
- 1/4 tsp Tuscan Blend
- 1/2 tsp Italian seasoning
- 1/4 tsp Black Pepper
Instructions
- Cook pasta, drain, and set aside.
- Add butter and garlic to pan and cook until garlic becomes fragrant.
- Add flour and wisk until flour begins to brown.
- Add a small amount of skim milk and wisk. Add remaining milk and wisk until lumps are gone.
- Add seasonings and continue to stir until sauce begins to thicken.
- Add Parmesan cheese and stir until melted.
- Add cooked pasta to sauce and toss until well coated.
- Serve immediately and Enjoy!
