Skinny Shrimp Scampi


Hopefully by now you are finding my “Slim & Trim” recipes pretty helpful and delicious. This week I’m sharing my Skinny Shrimp Scampi recipe with you. Its full of flavor and low on the guilt scale. I would say this recipe is pretty quick once the cooking process gets started; the prep may take a little longer depending on how fast you mince and if you have to clean and de-shell your shrimp. This recipe is super easy! You can also choose to leave out the pasta and just stick with the shrimp which can also be very filling. One time I bought a bag of frozen shrimp and steamed it for dinner…let me tell you I’ve never been happier lol. Sometimes eating healthier can be small changes; I know there are plenty of times where I start to over think things and become overwhelmed to the point where I stop trying all together. Lets make a plan to keep it simple and stick to making small healthy changes to out overall diet. This plan is fool proof!

Skinny Shrimp Scampi

Yield: 2 Servings

Skinny Shrimp Scampi


  • 1 cup raw shrimp (peeled & deveined)
  • 2 Tbsp Butter substitute (I used smart balance)
  • 4 Garlic cloves (minced)
  • Juice from half a lemon
  • 1/4 cup White cooking wine
  • 1/4 cup Water
  • Parmesan for garnish
  • Salt to tast
  • Pepper to taste
  • 2 Tbsp of Fresh parsley (finely chopped)


I also think giving up all the foods you love can lead to failure. So making small changes to the foods you eat now can make a huge difference in your weight loss goals. Swapping out your regular fat sour cream for low fat or fat free is a great place to start. I know some people prefer full fat so maybe just add 1 tbsp instead of the 2-3 spoonfuls you may normally add. With my Skinny Shrimp Scampi I still wanted to enjoy one of my favorite meals so I swapped out the super fattening stuff for smarter options.
