It’s been a while…..a long while, but I’m back! And, I didn’t come empty-handed. I’ve got a new, fun, and mouthwatering recipe. My Tex-Mex Smash Burger w/ Chipotle Lime Mayo. Listen, this is the only burger recipe you’ll need for a while….a long while!

Ingredients
Tex-Mex Smash burgers beef
- 1/2 Thinly sliced red onion
- 1/2 Bell pepper
- 1 JalapeƱo (optional)
- 2-3 tbsp taco seasoning
- 1-2 tbsp Knorr chicken bouillon powder
- Pepper to taste
- 4 slices of American cheese
- 1/2 cup Queso dip (2 tbsp)
- Can of Diced Green Chilies
Chipotle lime mayo
- 1/4 cup mayo
- 2-3 tbsp Chipotle sauce
- 1/2 lime juice
- Salt + pepper to taste
Garnish
- Lettuce
- Tomato
Instructions
- To start, thinly slice the bell peppers and onion and set them aside.
- In a large bowl, add ground beef, taco seasoning, and diced green chilies. Mix until all ingredients are combined. Separated into four large balls. Cover and refrigerate until you’re ready to cook.
- In a separate bowl, add mayo, chipotle sauce, lime juice, salt, pepper, and green chilies. Mix until combined. Cover and refrigerate until you’re ready to serve.
- In a skillet, add the cooking oil of choice and a mixture of onions and peppers. Add them in a pile (You’ll make four piles total–to fit four of the hamburger balls you created earlier) I like to add a little salt to the veggies.
- Let them cook for a bit before adding the ground beef ball to the top. Use parchment paper and a spatula to smash the burgers down until they are flat. This will help to form a crust on the burgers.
- Allow the burgers to cook for 2-3 minutes on the first side before flipping them over. Cook the burger until it meets your desired temperature.
- Add two tablespoons of queso to the top of the burgers. Then top with a slice of American cheese. Allow the cheeses to melt and mingle.
- I add a pot top to help the melting process
- Assemble the burger by adding Chipotle mayo to the bottom of the bun, then add your burger pattie with tomato, more sauce if you desire, then the top bun.
