Yasssss! You read that correctly Strawberry Beignet Shortcake Sundae. We’ve added a major twist to the traditional shortcake recipe. I figured if I’m gonna do a shortcake anything it better be worth it! Today is National Ice Cream Day and I think it’s safe to say that it’s a pretty joyful day for many.
Now I definitely cheated a bit by using beignet mix (available in your local grocery store) but who cares lol it’s still delicious and no one will know or care once they take that first bite. If you prefer to make these from scratch just google homemade beignets and I’m sure you’ll find a ton of recipes 🙂 Ok as promised I’m keeping these post short from now on for both our sakes lol. Ingredients
- 8 oz Water
- 2 cup Mix
- 4 cups Sliced Strawberries
- 1/2 cup Sugar
- Vanilla ice cream
- Whip cream
- Powdered sugar
- Cooking Oil (I used vegetable)
- Flour
Instructions
- Chop strawberries and add them to a bowl. Remove a third of the berries and mash or puree in a blender. Add the puree back to the sliced berries along with sugar and mix well. Cover with plastic wrap and place in the fridge for 30 minutes to an hour.
- In a separate bowl add beignet mix and water. Mix well until wet dough forms.
- Turn out the dough onto a floured surface and knead until the dough is no longer sticky.
- Form dough into large squarish rectangle about an 1/8 inch thick and cut into 4 squares/rectangles. (You basically want to make sure you form the squares the exact size you want the beignet to be because they won't expand they just puff out.)
- Add oil to a pan that is good for deep frying and allow oil to heat to frying temperature. I test my oil with a small piece of dough. (You want it to sizzle but not sizzle and burn immediately. If it turns brown too quickly your oil is too hot.)
- Add your beignet dough and allow to cook. The beignets will rise to the top turn over once the underside is golden brown or a tad darker and allow the other side to reach the same shade.
- Once the beignets are done scoop them from the oil and add to a plate to drain. Dust with powdered sugar immediately while hot and allow to cool for a minute before slicing in half.
- Grab your strawberries, whip cream, and ice cream for the assembly line.
- Add 2 scoops of ice cream to the bottom half of your beignets. Top with Strawberries and whip cream. Add the top half of the beignet and enjoy!
- The beignets will still be somewhat warm so you want to enjoy before the ice cream melts too much.
