Couple of quick notes:
Salmon: I used canned salmon but you could totally use fresh. Just make sure to cook it first before mixing with the other ingredients.
Grits: I used instant grits but I still cook them for longer than the recommended time. I prefer my grits super creamy and not grainy.

Salmon Cakes w/ Creamy Grits

3 Salmon Cakes
Ingredients
Salmon Cakes
- 1 oz Can of Salmon
- 1/4 cup Panko Breadcrumbs
- 1 tsp Old Bay Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 3-4 tbsp Mayonaise
- 1 Large Egg
- 1/4 tsp Black Pepper
- 2 tbsp Flour
- Pinch of Cayenne Pepper
- 1/4 cup Parmesan Cheese
Creamy Grits*
- 3-4 tbsp Butter
- 1/4-1/2 cup Heavy Cream
- 1/2-1 tsp Onion Powder
- 1/2-1 tsp Garlic Powder
- 1/2-1 tsp Creole Seasoning
- 2 Slices American Cheese
- 4 oz Cubed Monterey Jack Cheese
- *(Depending on how many servings you have and your taste)
Additional Ingredients
- Butter and cooking oil for frying salmon patties
Instructions
Salmon Cakes
- Make sure to remove bones and skin for canned salmon.
- In a large bowl add canned salmon, panko breadcrumbs, old bay, onion powder, garlic powder, mayonnaise, egg, black pepper, flour, cayenne pepper, and parmesan cheese. Mix until everything is well combined. Mix should be easy to mold once if you squeeze it in your hand.
- Form even patties by using an ice cream scoop or measuring your scoops.
- Set your cakes aside and prep your grits.
- Add oil and butter to a skillet and add you salmon cakes.
- Cook on each side until golden brown and cooked through. About 5-10 minutes.
Grits
- Cook grits according to package directions.
- Once you start cooking your grits reduce the heat to low and add heavy cream and butter. stir until well combined. Continue to cook you grits and cover with a lid.
- Add seasonings and cheeses. Stir until well combined.
- Cook until grits are creamy and smooth. About 20 minutes.
