Happy Margarita Day!! I’ve been pretty busy with life but I couldn’t let this day go by without a new recipe. The other night I was drinking a pineapple mimosa and I thought….how would a mimosa taste with a little tequila? Well I decided to try it and see if the combination would work and it did! Ingredients
- 1.5 oz Silver Tequila
- 3/4 oz Triple Sec
- 1 oz Lime Juice
- 2 oz Pineapple Juice
- Agave or simple syrup to taste
- Gold Sanding Sugar
- Lime Wedge (Garnish)
- Pineapple Wedge (Garnish)
- Champagne
- Pineapple Puree (Multiple Mimosas)
- 1.5 cups Pineapple
- 2 oz Agave or Simple Syrup
- 1/4 cup Pineapple Juice
Instructions
- Wet the rim of your glass and dip it in the sugar.
- Add tequila, triple sec, lime juice, and pineapple juice to a shaker.
- Add ice and shake for 10-15 seconds and pour into to rimmed glass.
- Top with champagne and enjoy!
- **I like to add my champagne to the glass before I add the margarita portion. It just helps to mix all the flavors together.**
- Pineapple Puree
- Blend all ingredients until fully pureed.
- Strain mixture until pulp is fully separated from juice.
- (I like to add 1-2 tsp of pulp to the juice for texture.
- Use for multiple mimosas at a time or store in the fridge for 1-2 days.
