Happy holidays! I’m super excited to be teaming up with a great group of black bloggers to bring you a ton of really delicious holiday cookie recipes. If you are a long time reader you may remember the post I created during Black History Month for the BHM Potluck. Todays post is pretty much the same concept. I worked super hard on this recipe….I really wanted to create a soft and chewy cookie. It’s literally the only way I can enjoy cookies. These cookies will not disappoint.
Like with any other cookie recipe you want to start by creaming the butter and sugar. I like to leave my butter out on the kitchen counter for no more than an hour. You don’t want the butter to be too soft because it will seriously alter the texture of your cookie. You also want to be sure not to over mix your cookie dough. This recipe is super easy and comes together pretty quickly.
After creaming your butter and sugar add your egg and vanilla extract. In a separate bowl add flour, cornstarch, baking soda, and salt. Mix until well combined and add to the brown sugar mixture. Be careful not to over mix your cookie dough when adding the chocolate chips and peppermint candy.
Use a cookie scoop to make perfect cookie balls; place them onto a greased baking sheet. Pop in the oven and bake for 10-13 minutes. The cookie may seem puffy when removing from the oven but they will set once it starts to cool.
Ingredients
- 2 cups Flour
- 3/4 cup Unsalted Butter
- 2 tsp Cornstarch
- 2 tsp Vanilla
- 1 Eggs
- Dash of salt
- 1 tsp Baking Soda
- 3/4 cup Brown Sugar
- 1/2 cup Chocolate Chips
- 1/4 cup Crushed Peppermint
Instructions
- Preheat oven to 325 degrees Fahrenheit.
- In a bowl cream softened butter and sugar until smooth.
- Add egg, brown sugar, and vanilla extract. Mix until well combined.
- In a separate bowl add flour, cornstarch, salt, and baking soda. Mix until well combined.
- Add dry ingredients to wet ingredients and mix. Be careful not to over mix.
- Add chocolate chips and crushed peppermint candy. Mix once more.
- Place dough in the refrigerator for 15-20 minutes.
- Once dough is chilled use a cookie scoop to form small cookie dough balls. Place cookie dough on a buttered baking sheet.
- Bake for 10-13 minutes. If the cookies seem soft to touch don't worry they will set more as they cool.
- Enjoy!
