Happy holidays! I’m super excited to be teaming up with a great group of black bloggers to bring you a ton of really delicious holiday cookie recipes. If you are a long time reader you may remember the post I created during Black History Month for the BHM Potluck. Todays post is pretty much the same concept. I worked super hard on this recipe….I really wanted to create a soft and chewy cookie. It’s literally the only way I can enjoy cookies. These cookies will not disappoint.


The Peppermint Chocolate Chip Brown Sugar Cookies are moist, soft, and chewy. The mix of mint and chocolate is perfect! These sugar cookies are made with brown sugar which makes them extra soft.

Like with any other cookie recipe you want to start by creaming the butter and sugar. I like to leave my butter out on the kitchen counter for no more than an hour. You don’t want the butter to be too soft because it will seriously alter the texture of your cookie. You also want to be sure not to over mix your cookie dough. This recipe is super easy and comes together pretty quickly.

After creaming your butter and sugar add your egg and vanilla extract. In a separate bowl add flour, cornstarch, baking soda, and salt. Mix until well combined and add to the brown sugar mixture. Be careful not to over mix your cookie dough when adding the chocolate chips and peppermint candy.

Use a cookie scoop to make perfect cookie balls; place them onto a greased baking sheet. Pop in the oven and bake for 10-13 minutes. The cookie may seem puffy when removing from the oven but they will set once it starts to cool.
