Good morning and welcome back to my blog! I have the perfect weekend brunch recipe for you and best of all its super easy to make! It’s my Peach Cobbler French Toast made with canned peaches and thick texas toast. Everyone loves peach cobbler and this recipe will be a hit….trust me!
You guys no I’m not big on a lot of yapping but I do want to go over a few notes with you.
Peaches: I used canned peaches but feel free to use fresh if you have them. You’ll just need to add more water to make up for the syrup. I would do an additional 1/4 of water and another 2-3 tbsp of sugar.
Graham Topping: The best part of cobbler is the crust so I created a small graham crumble that goes on top of everything. You could also just buy a graham cracker crust and crumble it up to save time. (My sister does this when she makes this recipe)
Bread: When making french toast I only use the thick texas toast slices…I don’t know it just does something to me lol. You can totally use any bread you like. For photo purposes I stacked the bread but to serve I usually cut the french toast diagonally and fan the slices out.
Whip Cream: I just buy store-bought whip cream but if you’re feeling fancy feel free to make your own.

Peach Cobbler French Toast
Notes
**I keep my french toast warming in the oven until I’m ready to serve breakfast. I use the warming setting or 170 F.**
Sub milk for heavy cream if necessary
Give peaches a rough chop if you like
Ingredients
Peach Cobbler Topping (Feel Free to double this)
- 15 oz Canned peaches
- 3-4 tbsp Brown Sugar
- 1/2 tsp Ground Cinnamon
- 1/8 tsp Ground Nutmeg
- 1/8 tsp Ground Cloves
- 1 tsp Vanilla Extract
- 1/4 cup of Water
- 1 tbsp Butter
- Pinch of salt
Cornstarch Slurry
- 1 tbsp Cornstarch
- 2 tbsp Peach Syrup
French Toast Batter
- 4 Large Eggs
- 1/2 cup Heavy Cream
- 8 slices Texas Toast Bread
- 1/4 cup Brown Sugar
- 1 tsp Vanilla
- Pinch Salt
Graham Crumble Topping
- 6 Whole Graham Crackers
- Pinch of Salt
- 2 tbsp Sugar
- 2 tbsp Melted Butter
Instructions
Graham Cracker Crumble
- Preheat oven to 325 F.
- Crust crackers into crumbs and add sugar, butter, and salt. Mix until well combined.
- Place mixture onto a baking sheet and prep down to form crust. (This doesn’t have to be pretty at all because we will crumble everything once fully baked.) Bake for about 20 minutes or until crust is golden brown.
- Set aside too cool before crumbing.
Peach Cobbler Topping
- Add canned peaches, brown sugar, cinnamon, nutmeg, cloves, vanilla extract, water, butter, and salt to a saucepan. mix well and bring to a simmer before turning heat to low.
- In a small bowl add 2 tbsp of the saucepan liquid with 1 tbsp of cornstarch. Mix well until slurry forms and return mixture to the saucepan to help thicken.
French Toast Batter
- In a bowl mix eggs, heavy cream, sugar, salt, and vanilla extract until well combined.
- Heat a skillet and add butter.
- Dip each slice of bread in the batter making sure to coat on both sides before adding to the buttered skillet.
- Cook french toast on both sides until golden brown. Remove from skillet and repeat until all slices are cooked.
Assemble
- Slice french toast diagonally and fan out on a plate.
- Add peach cobbler topping all over the top and sprinkle with graham cracker crumble, whip cream, and serve!
