With the holidays coming up I’m already in the process of planning my go to appetizers and meals for those work and social potlucks. I’m always looking for a semi homemade option to make my life a little easier. That way I get to treat everyone to a delicious dish that tastes like I spent hours in the kitchen.
I’ve recently stumbled across the perfect product that makes my life easier at home and while entertaining. McCain® Veggie Taters™ They are the perfect solution to family meals and snacks. They are also tasty enough that my kid doesn’t realize he’s eating veggies 😉 I definitely stock up on these at least once a week during my weekly shopping trip. They are a must have in my household. I have the worst time trying to feed veggies not only to my kid but also to myself. If I had a choice I would probably never eat them. I’m always looking for ways to incorporate veggies or find products that incorporate them for me. Lucky for me I hit the jackpot with McCain® Veggie Taters™. It’s made with real vegetables and has no artificial flavors.
I could go on and on about this amazing product but lets get to this recipe! After all it is the reason you’re all here. Now, I have what I think is probably the easier yet tastiest appetizer you’ll probably have for the rest of the year. It’s the perfect dish to prepare in a time crunch or just because. My Loaded Crispy Potato Bites are everything you love about a loaded baked potato but in a bite size snack. These are so delicious that I guarantee you won’t be able to have just one….and neither will your guests. This recipe takes very little prep and has just a few steps until you’re serving the perfect appetizer. Let me show how you how easy this recipe is….see full instructions and ingredients below!

Ingredients
- 1 Box of McCain® Veggie Taters™ (Potato & Cauliflower)
- 4 Cooked Slices of Bacon (Chopped)
- 1/2 cup Shredded Cheddar Cheese
- 1/4 cup Sour Cream
- 3 tbsp Chopped Chives
- 3 tbsp Chopped Scallions
- Cracked Black Pepper (Garnish)
- Kosher Sea Salt (Garnish)
Instructions
- Preheat oven to 425 degrees Fahrenheit. Place tots on a baking sheet and set aside until oven is fully heated. In a separate pan lay out your bacon (you will cook these at the same time and temperature in the oven).
- Cook the taters according to package directions. Check bacon periodically and remove when done.
- While your tots are cooking chop your chives and scallions. Shred cheese and measure sour cream. (I added my sour cream to a small sandwich bag to help with piping onto the tots).
- Once bacon is done drain on a paper towel and chop.
- Once all your ingredients are prepped its time to assemble. (Assemble in serving tray or dish for easy serving) Add sour cream, bacon, chives, scallions, black pepper, and salt to each tot (in that order).
- Serve immediately and Enjoy.
