Happy Tuesday everyone! …….I know I know many people would consider today Monday’s ugly step sibling BUT there’s still much to be happy and thankful for…..starting with my easy and delicious Sriracha & Lime Grilled Chicken Sandwich! Yes my friends I am having a major food crush today! When I say filling without feeling stuffed I mean it. My family has requested this meal at least three times since I originally tested the recipe. I’m definitely not one to toot my own horn but for this one I must say TOOT TOOT BEEP BEEP 😉
Now if you’re a regular here you know that lately I’ve been experimenting with marinades because I am convinced that they take any meat to a completely different level of flavor. For this recipe I decided to incorporate lime because like everyone else I’m on a lime kick as well; and I used buttermilk because I love the tang and moisture that it adds to the chicken. I decided to add Sriracha because I love the spice factor it provides but I also appreciate all of the undertone flavors you taste. Another flavor that I have been loving is Cumin! I think it is an absolutely delicious spice and adds a world of depth to any dish. If you aren’t already cooking with it please start TODAY! You can thank me later! When making the marinade I combined all the ingredients in a big bowl and mixed until well combined, I then transferred everything to a zip-lock bag with the chicken. Now when it comes to your choice of chicken I prefer using chicken thighs because they are super juicy and tender…if you are watching your fat intake I suggest using chicken breast which I feel will be just as tender after spending the right amount of time in the marinade.
The best part about this recipe is how quick and easy it is! You could literally make this marinade the night before or the morning of and slap it right on the grill as soon as you get home from work and Voila! Dinner is served. I suggest a light salad or fries as a side dish.
Ingredients
- *Marinade *
- Juice of 1 lime
- 1 tsp Garlic Powder
- 1/2 cup Sriracha Chili Sauce
- 1 tsp Cumin
- Salt & Pepper to taste
- 1 1/2 cups Buttermilk (You can make your own by adding 1 1/2 cups of milk and 2 tbsp of distilled vinegar)
- Garnish
- Dill pickle spears
- Red onion
- Lettuce
- Tomato
- Sriracha Mayo
- 1/2 cup Mayo
- juice of 1/2 lime
- 2-3 tbsp Sriracha Chili Sauce (more or less depending on your taste)
- Salt & Pepper to taste
- Additional Ingredients
- Bun or Roll of your choice
- 2-3lbs of chicken thighs or breast (I distributed 2 thighs per sandwich)
Instructions
- 1. Mix buttermilk, cumin, garlic pepper, lime juice, Sriracha Chili Sauce,and salt & pepper until well combined.
- 2. Add chicken to zip-lock bag with marinade and massage marinade into the meat for about 30 secs. If you plan to cook the chicken within the hour you can leave the chicken out at room temperature to marinate; if not place the chicken in the refrigerator up to 12 hours.
- 3. Once marination process if complete shake off the excess marinade and place chicken onto a baking sheet until ready to grill. (I used an outdoor grill)
- 4. Prep veggies for garnish and set aside.
- 5. Mix mayo, lime juice, salt & pepper, and Sriracha Chili Sauce
- 6. Grill chicken until completely cooked through and remove from heat to rest.
- 7. Build your sandwich!
- 8. Plate & Enjoy!
