Easy Dinners Require Crockpots/Slow Cookers
Happy Thursday everyone! I hope you are having a fabulous morning. Is it cold enough for you? It’s freezing here in the Washington D.C. area. Which makes today’s recipe perfect! I am so excited to share my Slow Cooker Dinner recipe with you! I have been making this for about 5 or 6 years now and my family absolutely loves it! It’s pretty easy and takes no time at all due to the magic of the crockpot. Crockpots/slow cookers always make me think of that infomercial that yells “Set it and forget it!” lol. I know this clearly isn’t that product but it definitely has the same cooking instructions.
The best thing about cooking with a crockpot is the ability to prep your ingredients right before work and come home to a delicious smelling home with dinner ready. After a long stressful day at the office, the last thing you feel like doing is coming home and cooking dinner, and with this recipe cooking dinner will be the least of your concerns.
I have tried different variations of this crockpot chili by adding different meats or a combination of meats (Italian turkey sausage, ground turkey, ground beef, ground chicken, ground pork, etc.) As always with my recipes feel free to experiment and swap out the ingredients to what works best for you and your family. Ingredients
- 2 Tbsp + 1 Tsp Chilli Powder
- 1 Tbsp Dried Oregano
- 1 Tbsp Dried Parley
- 1 Tbsp Cumin
- 1 Tbsp Onion Powder
- 1 Tbsp Garlic Powder
- 2 Tbsp Worcestershire Sauce
- 1 Tsp Cayenne Powder (Optional)
- 1/4 cup Tomato Paste
- 1 Cup Beef or Chicken Stock
- 28 oz Can Diced or Crushed Tomatoes
- 1-1.5 lbs Ground Meat
- 15 oz Can Dark Kidney Beans
- 15 oz Can Light Kidney Beans
- 1/2 Medium Onion, Chopped
- 1-2 Jalapeño, Diced
- 2-3 Garlic Cloves, Minced
- Salt & Pepper to Taste
- Toppings: Scallions, Shredded Cheddar Cheese, Sour Cream
Instructions
- Set crockpot to high or low depending on cooking time.
- Chop onion, bell pepper, jalapeno, and minced garlic; set aside.
- Add butter and olive oil to a skillet; sauté garlic, onion, bell pepper, and jalapeño.
- Add meat cook for 1-2 minutes while breaking up the meat.
- Add seasonings and continue to cook.
- Once the meat is finished cooking add it to the crockpot along with the vegetables.
- Add beans, tomatoes, Worcestershire sauce, stock, additional seasonings if desired, and tomato paste; stir until well combined.
- Season again with salt & pepper.
- Cook for 4 hours on high or 6-8 on low.
- Serve while hot and Enjoy!
