Hey you guys I’m so excited to bring you a new recipe! Right now there’s a ton of basketball going on so I’m in full on hostess mode! I love having family and friends over to watch the all of the college basketball games. This year I wanted to create a bunch of fun appetizers but for a big finish I wanted something sweet and fun to eat. I came up with the idea of a Citrus 7UP Bundt Cake! It’s packed with the same bold lemon lime flavor that makes 7UP® so good. I love citrus sodas; so 7UP is usually a go to for me whenever I’m buying drinks for a party.
I usually purchase the 12 pack of 7UP soda whenever I buy it at Walmart. It’s always located in the soda aisle with a few different packaging options. For this specific recipe I was able to use 1 can for the recipe and the other 11 were served to friends and family. 7UP is super versatile! it’s the perfect drink to quench your thirst when snacking on game day foods and it’s great to incorporate into tasty desserts like cakes and turnovers.
The 7UP is used ALL over this recipe and it’s definitely a fun conversation starter for your next party! Best of all, the recipe is super easy to make and uses very little ingredients. Now let’s get started on making this delicious cake so you can have it for you next party! I was able to purchase all of my recipe products at Walmart! It’s super convenient to stop at one store and get everything you need.
Cream butter, sugar, and vegetable oil until well combined. Next add vanilla extract and eggs. Mix well with an electric hand mixer or stand mixer until well combined.
Next, prep your dry ingredients. In a separate bowl mix flour, salt, and baking powder until well combined.
Prep your milk mixture by adding equal parts heavy cream and 7UP soda to a measuring cup. Give mixture a good stir and set aside to be combined with flour. Add a little of the flour mixture to the wet ingredients a little at a time making sure to alternate between the flour and milk mixture.
Once flour and milk mixture is fully combined and the batter is complete, separate 2 cups of batter into a separate bowl and add green food coloring along with lemon extract. At this stage, you could also use a combined tablespoon of lemon and lime juice.
Once you have your citrus green batter it’s time to bake the cake! Spray a bundt pan with baking spray or grease with butter and flour. Add one spoonful of green batter and white batter at a time. Alternate the colors until all of the batter is in the bundt pan.
Bake in the oven at 350 degrees fahrenheit for 55 minutes or until toothpick inserted comes out clean. While the cake is in the oven or cooling you can make the glaze. Add confectioners sugar, 7UP soda, melted butter, and lemon extract (or lime and lemon juice) to a bowl. Wait for the cake to cool completely before adding the glaze. Once the cake is glazed make sure to add lemon and lime zest to the top of the glaze. I also added slices of lemon and lime to the middle of the bundt cake.

- Bundt Cake
- 2.5 cups All Purpose Flour
- 2 tsp Baking Powder
- 1 tsp Salt
- 2 Sticks Butter
- ¼ cup Vegetable Oil
- 1 ¾ cup Sugar
- 2 tbsp Vanilla Extract
- 2 Eggs
- ½ cup Heavy Cream
- ½ cup 7UP
- 1 Tbsp Lemon Extract
- 1 Bottle Green Food Coloring
- Glaze
- 1.5 cups Confectioners Sugar
- 1 tsp Lemon Extract
- 1 tsp Melted Butter
- 2 tbsp 7UP Soda
- Lemon & Lime Zest to Top Glaze
Instructions
- Preheat oven to 350 degrees fahrenheit.
- In a large bowl cream butter, vegetable oil, and sugar until well combined.
- Add eggs and vanilla extract and mix until well combined.
- In a separate bowl, mix flour, baking soda, and salt until well combined; set aside.
- Add heavy cream and 7UP soda to a measuring cup; give mixture a quick stir.
- Alternate dry ingredients (flour mixture) and milk mixture into the wet ingredients (sugar mixture) until fully combined.
- Separate 2 cups of batter and add green food coloring and lemon extract. Mix until fully combined.
- Add spoonfuls of white batter and green batter to a greased bundt pan until all of the batter is added to the pan.
- Bake for 55 minutes or until toothpick comes out clean.
- While cake is in the oven add confectioners sugar, melted butter, lemon extract, and 7UP soda to a bowl. Mix until thick glaze forms. If the glaze is too runny add more sugar.
- Once cake is completely cool spoon the glaze onto the bundt cake. Ganish the middle of the cake with lime and lemon slices. Add lemon and lime zest to the top of the glaze.
- Serve to all of you party friends!
