Well as you all know National Ice Cream Day was Sunday and everyone screamed for ice cream! I myself enjoy a few scoops of butter pecan, vanilla, or strawberry. Honestly who am I kidding I’ll take any flavor! **wink**
On Saturday I spent a little time at Walmart buying a few household items and groceries. While I was there I ran into a Blue Bunny Ice Cream demonstration. I was super excited for an icy treat! Especially on a hot day.
The demonstration featured vanilla ice cream with fresh peaches. It was absolutely delish! I loved the vanilla ice cream so much that I decided to purchase some and make an ice cream pie.
But not just any pie…..I knew it had to be something absolutely delicious! I decided to incorporate all the things I love chocolate syrup, milk chocolate candy bars, caramel, whipped cream, peanuts, and chocolate sandwich cookies. I was able to get everything from Walmart!
I decided to go with the vanilla ice cream by Blue Bunny because it’s a versatile flavor plus Blue Bunny Ice Cream is super rich and creamy it’s definitely one of my favorite ice cream brands.
I started by creating my crust. I used a chocolate sandwich cookie with cream filling and blended them in a food processor. I also added butter and vanilla extract for extra flavor. I baked the pie for about 6 min and set aside to completely cool.
Once the crust cooled I decided to add a layer of nuts and caramel as the first layer of the pie. I made sure to put it in the freezer for about an hour to allow the caramel and nuts to set.
Next I decided to add some chocolate into the ice cream. I finely chopped some milk chocolate candy bars and added them to the ice cream. I mixed until fully combined and placed in the freezer to set until the caramel layer was completely set. **Make sure the ice cream is somewhat softened before attempting to scoop and mix**
Next I added the ice cream layer to the pie crust and place it back in the freezer overnight. If you are in a rush you can place the pie in the freezer for a minimum of four hours.
Once the pie was completely set I added a whipped topping and drizzled it with chocolate and caramel syrup…..and plenty of chopped nuts!
When cutting the pie I made sure to rinse the knife with hot water to make the cutting process easier….just make sure to wipe any access water before cutting into the pie.

Ingredients
- 25 Chocolate sandwich cookies
- 4 cups Vanilla ice cream
- 3/4 cup Caramel sauce
- Caramel sauce (Drizzled to your liking)
- Chocolate sauce (Drizzled to your liking)
- 1/2 cup Peanuts finely chopped
- 1 cup of Cool whip
- 4 tbsp Butter
- 1/2 cup Milk chocolate bars (finely chopped)
- 1 tsp Vanilla extract
Instructions
- 1. Preheat oven to 350 degreesFahrenheit
- 2. Remove ice cream from freezer and allow to soften
- 3. Blend sandwich cookies with cream in a food processor until crumb like. Add vanilla extract and butter to cookie crumbs and blend until well combined.
- 4. Spray pie plate with cooking spray and add cookie crumbs in to plate. Use the flat edge of a glass or measuring cup to flatten out crumbs and develop a crust. Make sure to push the cookie crumbs along the side of the pie plate.
- 5. Place pie crust in the oven for 5-7 minutes until set. Take out of the oven and allow to cool completely.
- 6. Finely chop nuts and chocolate bar separately and set aside.
- 7. Add caramel and nuts to the bottom of the pie crust. Make sure to evenly distribute these two ingredients. Place in the freezer for 1 hour and allow to set.
- 8. Mix ice cream and chocolate until well combined. Cover with plastic wrap and place back in the freezer until caramel and nuts are set.
- 9. Add ice cream to the pie crust and evenly distribute. Use a rubber spatula or knife to smooth out the top.
- 10. Cover pie with plastic wrap and place pie in the freezer for 4-12 hours.
- 11. Remove pie from freezer and top with whipped topping. Drizzle caramel and chocolate with a spoon until desired amount it reaches. Top with nuts.
- 12. Place pie back in the freezer uncovered for 1 hour and allow topping to set. Or enjoy right away.
- 13. Plate and enjoy!
That looks like a slice of heaven. I love ice cream pies but they don’t usually have ALL of the goodies in them. This has everything you could want – love that. #client
