I know why you’re here…..you’re here for this amazing cookie recipe. I am so excited to share this recipe with you. It definitely screams Christmas but with a twist. The filling is seriously out of this world! The recipe is super easy and comes together pretty quickly. I would say the hardest part about this recipe is waiting for the cookies to cool before applying the filling.
My secret ingredient in this recipe is my Rodelle Vanilla Extract. The flavor of vanilla can really take a recipe to the next level. Rodelle uses pure ingredients to get the best flavor possible. I swear by it and so does my family.

Ingredients
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Cloves
- 1/4 teaspoon Allspice (my choice)
- 2 cups all Purpose Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/2 cup Butter Softened
- 1 cup Granulated Sugar
- 1 Egg
- 1 tablespoon Rodelle Vanilla Extract
- 1/4 cup Molasses
- *1/4 cup Granulated sugar for rolling
- Cream Cheese Filling:
- 4 oz Softened Cream Cheese
- 1/4 cup Softened butter
- 1 tsp vanilla
- 1 cup powdered sugar
- 1-2 tbsp Milk
Instructions
- Preheat oven to 350 degrees fahrenheit.
- In a mixing bowl cream butter and granulated sugar together until fully combined. Add your egg, molasses, and Rodelle vanilla. Mix until well combined. Stir in remaining ingredients and mix until dry ingredients are just combined.
- In a separte bowl mix flour, cinnamon, allspice, cloves, ginger, salt, and baking soda until well combined. Slowly add the flour mixture to the sugar and butter mixture until well combined.
- Use a small ice cream scoop to keep your cookies uniform. Roll them into balls and place them in granulated sugar. Place on a well greased cookie sheet.
- Bake 6-8 minutes make sure the cookies are still soft on the inside.
- Let the cookies cool before moving them to a cooling rack.
- Cream Cheese Filling: Cream butter, cream cheese, sugar, and Rodelle Vanilla Extract together until smooth. Pipe the filling onto each cookie and top with the another cookie to create the sandwich. Repeat until all cookie sandwiches are made.
