Hey guys I’m back with another recipe! When I created this recipe I just kept thinking about juicy fried chicken transformed into a bbq summer sandwich. I definitely think I hit the nail on the head with this one.
The chicken thighs are marinated overnight in a buttermilk mixture to insure extra tenderness and then battered and fried to perfection. The chicken is then pulled apart into to shredded pieces. It’s placed on a brioche bun and topped with a buttermilk coleslaw and a chipotle bbq sauce. Trust me when I say your family will love this one. Recipe details below!

Ingredients
Buttermilk Slaw
- 4-5 Boneless Chicken Thighs
- 3 cups Slaw Mix
- 1/4 cup Mayo
- 1/4 cup Buttermilk
- Juice From Half a Lemon
- 1/2 tsp Onion Powder
- Salt & Pepper to Taste
- 1/4 tsp Garlic powder
- 2-3 tbsp of Sugar
Marinade
- 1 cup Buttermilk
- 1 tsp Onion Powder
- 2 tsp Seasoning Salt
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Pepper
Frying
- 1 cup Flour for frying
- 1/2 tsp Pepper
- 1 tsp Smoked Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- Vegetable Oil
Chipotle BBQ Sauce
- 1/2 cup BBQ Sauce
- Juice half lime
- 1-2 Chipotle Peppers
Additional Ingredients
- 4-5 Brioche Buns
- Pickles
Instructions
Buttermilk Slaw
- In a bowl add slaw mix, mayo, buttermilk, lemon juice, salt, pepper, garlic powder, and sugar. Toss until everything is mixed well. You can adjust the salt and sugar to your liking.
- Place in the refrigerator to chill until the sandwiches are ready to be assembled.
Marinade
- In a separate bowl add buttermilk, onion powder, seasoning salt, smoked paprika, and garlic powder. Mix well and add chicken thighs to the marinade.
- Cover bowl with plastic wrap and marinade in the refrigerator for a minimum of 4 hours up to overnight.
Chipotle BBQ Sauce
- In a food processor or blender add plain bbq sauce, chipotle peppers, and lime juice. Pulse until smooth.
- Store in a small bowl and set aside until the sandwiches are being assembled.
Frying
- In a separate bowl mix flour, pepper, smoked paprika, onion powder, and garlic powder until well combined.
- Use enough vegetable oil to cover you chicken halfway. Test your oil by sprinkling in a bit of flour (you want it to sizzle but not burn the flour quickly)
- Add each piece of chicken to this mixture until well coated. Shake off extra flour and add to heated oil.
- Each piece should have a internal temperature of 165 degrees Fahrenheit when done.It should also be golden brown.
- Remove from grease and place on paper towel to drain.
- After the chicken rests for a few minutes begin shredding the meat using two forks.
Sandwich Assembly
- Grab you bun and add bbq sauce to the bottom half along with pickles
- Top with shredded meat and finally the buttermilk slaw.
- Add the top bun and enjoy!
