This years theme is comfort food. This was a no brainer to work with because for me comfort food comes in the form of breakfast or brunch. For this potluck I wanted to make Brown Sugar Cornmeal Waffles w/ Sweet Tea Maple Syrup. Yes, you read that correctly 😉 this dish has southern comfort written all over it. My mom and dad we’re both born and raised in Alabama so I grew up eating some ALOT of home cooked meals.

I know people tend to stray away from homemade recipes due to difficulty but let me tell you there is nothing difficult about this dish and you’ll be glad you took the time to make it. Get those waffle irons preheated and let’s make some waffles.
Quick cooking notes:
Cornmeal: I used corse yellow corn meal because I like the stone ground texture. If you prefer to use fine corn meal that is completely fine.
Maple Syrup: When bringing all ingredients to a boil make sure to use a bigger heavy bottom sauce pan. This will give the syrup room to bubble up and thicken.
Sweet Tea: I used Luzianne Black Tea bags and only needed one. Feel free to add a second if you want a more concentrated taste.
Brown Sugar Cornmeal Waffles w/ Sweet Tea Maple Syrup
Notes
Add 1-2 tbsp of butter once sauce is off the heat for a buttery and creamy texture.
Ingredients
Brown Sugar Cornmeal Waffles
- 1 cup all-purpose flour
- 1 cup coarse yellow cornmeal
- Pinch teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tsp vanilla extract
- 4 tablespoons unsalted butter (melted)
- 2 cups milk
- 2 large eggs
- 3/4 cup brown sugar
Sweet Tea Maple Syrup
- 1 cup Water
- 1 cup Brown Sugar
- 1 cup Sugar
- 1-2 Tea Bags
- Pinch of Salt
- 1/2 tsp Vanilla Extract
Optional Garnish Ingredients
- Blueberries
- Strawberries
- Confectioners Sugar
Instructions
Brown Sugar Cornmeal Waffles
- In a large bowl add flour, cornmeal, salt, baking powder, baking soda, and brown sugar. Mix until well combined and set aside.
- In a separate bowl add melted butter, eggs, and milk. Whisk until well combined and add to the dry mixture. Stir until fully combined and set aside.
- Preheat waffle iron and add your waffle. Cook until golden brown. Repeat until all waffles are cooked.
Sweet Tea Maple Syrup
- In a heavy bottom sauce pan boil water and steep tea bag(s) until water becomes concentrated.
- Remove tea bags and add sugar. Turn on the heat and allow mixture to come to a boil before cutting the heat to low and allowing it to simmer.
- Make sure to stir. Cook mixture for 5-8 minutes and remove.
- Add vanilla extract and stir until combined. Allow syrup to cool and thicken.
- **Adding more sugar will make for a thicker syrup.**
