You guys have no idea how much I’ve missed you! I’ve been working super hard long hours for the past three months and I haven’t had any time to work on the blog or create any new recipes. Today is actually my full first day off in a very longgggg time. I’ve literally been dreaming about this day not only because it gives me some much needed rest but also because I feel like I deserve some sort of treat for completing all of the hard work and making it through in one piece.
I’ve had a long few months of the production and now that I’ve got some time I’m thinking I want a happy hour celebration for me and my two sisters. I was planning on seeing them this weekend anyway but I thought why not make it fun. Whenever I want to relax I always have a delicious cocktail; problem is I haven’t had time to run to the store and buy anything so I’m kind of in a bind with ingredients.
Lucky for me I’ve got a few ingredients in the fridge that I think will work great with each other. Earlier this year I had a fruit smash cocktail that was absolutely delicious. I want to re-create that and make it super easy so that my sisters and I can basically serve ourselves LOL.
While looking in the fridge I was able to find some basil, peaches, lemons, club soda, and Tropicana peach lemonade. Now I just need to put together a quick dip and we are in business. Cocktail of the day is a Peach Basil Smash!
This drink is perfect for summer and packed full of flavor. So let’s get started and make this super easy quick treat that is much needed after the hard work I put in over the last few months. First let’s start by thinly slicing the basil and cutting your peaches into slices. You want to remove the skin for half and keep the skin on the rest for garnish.
Next add about three peach slices, a tablespoon of basil, and a 1/4 tsp of agave to each glass.
Muddle the ingredients in each glass until peaches are somewhat puréed and the basil scent grows stronger.
In a cocktail shaker add vodka, orange liqueur, Tropicana Peach Lemonade, and ice. Shake until chilled. Add ice to each glass and pour cocktail evenly. Add a squeeze of lemon and top with club soda.
