Cauliflower Fried Rice (Low Carb)

You guys I’m so excited! I’m down 1.8lbs this week and Im happy to say the way I’ve been cutting back is actually paying off. I’ve been trying to eat the foods I love but make them healthier so it should come as no surprise that I found a way to keep take-out food on the menu 😉 I’ve got something good for you guys today and I promise after trying this you won’t even miss the traditional take-out recipe. I’m making Cauliflower Fried Rice and it’s absolutely delish! Plus it’s super easy to make.

The last time I had good take out was about a month ago. I ordered the shrimp & broccoli over fried rice….I know I know it’s pretty fattening but oh so good and I just love that sauce and how good it tastes with the rice. I also ordered an extra egg; there’s just something about that extra egg that really gets me going lol. I love fried rice so I had to figure out a way to keep it in my life without all the guilt. The best part about cauliflower is that it’s super versatile and can pass for potatoes and rice easily. I love how I can swap it for a carb and not feel guilty after eating it. In this recipe you have all the normal fixings without the guilt. I load this rice up with veggies, garlic, onion, soy sauce, and of course rice…..and to add extra flavor I cook it in sesame oil.

You want to start by chopping the cauliflower. I used a food processor and went a little crazy and chopped my rice a little too small lol. So make sure you pulse and not just let it run. Also chop your garlic, onions, and scallions before you get started. When ever you make these types of dishes stir fry, fried rice, etc. things move pretty quickly so having all of your ingredients prepped before hand will be super helpful while cooking. I also used a bag of frozen peas and carrots to make things easier on myself. You could also just buy a can of each and rinse/drain them before adding them to the skillet.

Cauliflower Fried Rice

Ingredients

  • 1 head Cauliflower (chopped into rice size bits)
  • 1 tbsp Butter
  • 2 Garlic Cloves (minced)
  • 1 bag frozen peas & carrots
  • 1/2 cup chopped Scallions
  • 1 tbsp Sesame Oil
  • 3 tbsp Soy Sauce
  • 2 Eggs

Instructions

  1. Wash, chop, and grate Cauliflower (I used a food processor).
  2. Add sesame oil and garlic and onion to a skillet and cook until garlic becomes fragrant.
  3. Add Cauliflower rice and veggies to skillet and cook until soft or rice textured.
  4. Move rice and veggies to sides of the pan creating a well in the middle.
  5. Add eggs to center and begin cooking. Once eggs are finished cooking combine them with the Cauliflower rice mixture.
  6. Add chopped scallions.
  7. Lastly add soy sauce and stir until well combined.
  8. Serve immediately and Enjoy!

The best part about this recipe is you can add meat! Chicken, beef, shrimp, or ground beef/turkey whatever you want! Adding protein is a great way to beef up this meal and help you stay full longer. Here’s another tip…..if for some reason you want to indulge in the fatty version of fried rice just add rice and follow the rest of the recipe….see I just gave you two recipes in one lol.
