Happy Monday guys! How excited are you? I can’t believe Thanksgiving is finally upon us 🙂 In my house we have a FULL on feast every year and I can’t wait to dig in! The food is sooooo good that we eat leftovers for days! The only problem is that after eating so many leftovers you start to grow tired of the same food even if it is good. I decided to create a recipe to turn your leftover Green Bean Casserole into something new and delish! I wanted to create something that you could have for brunch and I think I nailed it.
I’m sure there are a ton of leftover recipes that can be revamped into something delicious but I chose to tackle the Green Bean Casserole because that recipe is usually a crowd favorite among many families. to make my casserole I use Swanson® Chicken Broth, Campbell’s® Cream of Mushroom Soup, Del Monte® Blue Lake® Cut Green Beans, and French’s Crispy Fried Onions! I purchased all of my products at Target which made it easy to shop for other items that I needed around the house.
To make things super easy on myself I rely on Del Monte® high quality canned vegetables. We use them year round at the house and they help take some of the load off without sacrificing quality and taste. Swanson® Chicken Broth can be used in many things! Soups, casseroles, marinades, etc. The possibilities are endless and it’s definitely a product I trust. I add Campbell’s® Cream of Mushroom Soup to a ton of recipes; along with their cream of chicken soup!
Now lets get started! First you want to add your eggs, seasonings, half & half, and Swanson® Chicken Broth to a bowl. Use a whisk to completely mix the egg mixture.
Next add shredded cheese to the mixture along with the leftover Green Bean Casserole. Mix well.
Add the egg mixture to a frozen or fresh pie crust and top with French’s Crispy Fried Onions and more shredded cheese. Place in the oven for 50 minutes at 350 degrees fahrenheit or for 30-40 minutes at 375 degrees fahrenheit. It’s totally up to you and the time frame you have to prepare the meal 🙂

- 4 eggs
- 1/3 Half & Half
- 1/4 tsp Pepper
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- Salt to taste
- 1/3 Swanson® Chicken Broth
- 1 cup Shredded Cheese (reserve 1/3 for topping)
- 2 cups Leftover Green Bean Casserole
- 1/4 cup French's Crispy Onions
- Frozen Deep Dish Pie Crust
- Preheat oven to 350 degrees farenheit.
- In a large bowl combine eggs, half & half, seasonings, and Swanson® Chicken broth; whisk until well combined.
- Add leftover green bean casserole and cheese to egg mixture. Stir until well combined.
- Place egg mixture into a frozen or fresh pie crust.
- Top with French's Crispy Onions and more shredded cheese.
- Bake in the oven for 50 minutes or until egg is set.
