Good Morning and happy Thursday! I’m super excited to bring you guys a new recipe perfect for these super hot summer days. I have been on a ice cream binge for the last month! I’ve been in search of the perfect ice cream and I honestly think I found it. I stopped by Walmart the other day to browse the ice cream isle and I stumbled across my favorite brand of ice cream…which as first kinda caught me off guard because they changed their look!

 I am so obsessed with Blue Bunny® ice cream. Their new look is absolutely adorable and the flavor options are out if this world. With the new clear look I can see all the flavor swirls throughout the ice cream! I’m currently loving their Blue Bunny® Bunny Tracks® ice cream…I live it so much that I decided to make a new recipe for it lol.  I told you guys I’ve got ice cream on the brain and I’m not afraid to show it lol. I ended up buying Blue Bunny® Cookies & Cream, Blue Bunny® Salted Caramel Craze, and Blue Bunny® Bunny Tracks®

I decided to make a Soft Baked Chocolate & Caramel Ice Cream Cookie using Blue Bunny® Bunny Tracks® Ice Cream Sandwich. I know I say this with every recipe but seriously this one is sooooo simple anyone could do it. First things working you gotta make this delish cookie dough. This cookie has a chocolatey base so You need to add cocoa powder to get the flavor. After that you load it with tons of Caramel bits!

Next you combine the dry ingredients with the wet and for little cookie dough balls. I like to use an ice cream scoop so that I get perfect uniform cookies every time.

These cookies bake super for fast so stick them in the oven for 12-15 minutes making sure to rotate your tray halfway through the baking process. When they come out allow your cookies to cool before topping the insides with the Smucker’s Caramel Spoonable Ice Cream Topping. Using Smucker’s ice cream toppings are the perfect way to dress up your ice cream dessert without spending a bunch of money!

Then add a heaping scoop of Blue Bunny® Bunny Tracks® and top with another cookie to create your ice cream sandwich. I suggest you freeze these for about 45 minutes to an hour to allow the ice cream sandwich to set or if you’re like me and my family you will just eat them right away! lol.

Soft Baked Chocolate & Caramel Ice Cream Cookie Sandwich w/ Blue Bunny® Bunny Tracks®

Soft Baked Chocolate & Caramel Ice Cream Cookie Sandwich w/ Blue Bunny® Bunny Tracks®

Ingredients

  • 1 cup Butter
  • 1 cup Light Brown Sugar
  • 2 Eggs
  • 1 tbsp Vanilla Flavoring
  • 2 cups All purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Caramel bits
  • 1/4 cup unsweetened cocoa powder
  • Blue Bunny® Bunny Tracks® ice cream

Instructions

  1. Preheat oven to 325 degrees Fahrenheit; spray sheet pan with cooking spray and set aside.
  2. Beat butter and brown sugar until smooth.
  3. Add eggs one at a time and beat well; Add Vanilla extract.
  4. In a separate bowl whisk flour, baking soda, cocoa powder, and salt until well combined.
  5. Add dry ingredients to wet ingredients and mix until well combined.
  6. Mix in caramel bits until well combined.
  7. You can refrigerate the dough for 30 minutes for a more compact cookie or skip this step and move on to baking.
  8. Bake for 8-10 minutes; make sure to rotate your cookies halfway through the cooking process.
  9. Remove cookies from oven and allow to cool for 1-2 minutes before transferring to the cooling rack.
  10. Once cookies have cooled spoon caramel syrup onto the inside of each cookie.
  11. Add heaping scoop of Blue Bunny® Bunny Tracks® Ice Cream to one cookie and top with the other cookie.
  12. If you wish Return to freezer for 30-45 minutes to allow ice cream sandwiches to set or enjoy right away!
