OK now…. I’m so excited because Valentines Day is one of my absolute favorite holidays. For me February is literally the month of LOVE! My birthday is right around the corner, Valentine’s Day is coming, and my Anniversary is also this month. So as you can see I’m showered with tons of love during this month and I LOVE it lol.
I think going out on Valentine’s Day is great BUT it can be kinda busy and crowded because everyone is thinking the same thing (a night out on the town) not to mention with children it can be pretty hard to get away for the night. Well thats why I’ve decided to focus the first two weeks of February on a Romantic date night for two at home. I happen to think this meal is super easy and super delicious….. of course I might be biased but I will let you be the judge.
This six part series will feature two side dishes (Grilled Asparagus and Twice Baked Potato Casserole) one main dish (Rosemary & Garlic Ribeye along with the Marinade Recipe) Valentine’s Day Cocktail (Strawberry & Chocolate Sundae Martini) and a Dessert (Double Chocolate Skillet Cookie w/Sprinkles) Yes you guys are in for a treat!

- 4 Tbsp Butter
- 1 Garlic clove minced
- 1 Bushel of Asparagus
- Salt & Pepper to taste
- Serve with Lemon
- Mince garlic and set aside.
- Melt butter; add garlic and wisk until well combined.
- Wash and cut Asparagus.
- Heat indoor grill or prep outdoor grill.
- Add asparagus to grill; brush with garlic butter.
- Season with salt and pepper to taste.
- Cook for 2-4 minutes on each side; continue to brush with garlic butter.
- Remove from heat and garnish with lemon wedges.
Make sure to cook asparagus to desired tenderness.
